Cocoa Tahini Bites (Vegan + Keto)

There truly isn’t a lot I can write in the space above a recipe that could merit the extra time before you actually make the food... so here’s a funny story for all of you who seem to enjoy these recipe-related anecdotes!

I’ve never been a “picky” eater... more, a diet focused diner. (Though I did pretend to be allergic to tomatoes at one point in my childhood.) I am a big fan of optimization when it comes to food, and while that meant variety at one point (read: I’ve eaten crazy things from ostrich to petrified shark), it now means doing what makes my body feel best. Lately, that’s been Vegan Keto (plus the occasional pieces of fish). So yes, I basically just eat greens and fish all day.. but sometimes you just crave a nice, decadent chocolate. When I say crave, I don’t mean a strong yearning for, I mean, an immediate need for chocolate that is so deep, that if it remains unfulfilled, you can pretty much forget the whole diet thing all together and meet me in a pool of chocolate fondue... but I like to be good, so I play by my body’s rules. You want chocolate? Okay, let me find a way to get some diet friendly chocolate for you. Avocado toast? Okay, let’s make an almond flour flatbread for our delicious mash. Rice cracker? Okay- I don’t exactly have a great substitution for this at the moment, but we’ll work on it. And that’s the great secret to my diet success.

This all brings us back to about a week ago when I couldn’t stop thinking about gooey chocolate cakes, 2-bite brownies, or even healthy bliss balls, and thus found myself in a sea of kitchen ingredients trying to make the most delicious, Keto, vegan chocolate delicacy I’ve ever had, with no grains, limited healthy sugars, and no cashews (the staple of the vegan dessert world). So here you have it. A rampant collection of items that somehow came together to be a decently good chocolate with a hell of a reputation. Now, enjoy getting to say that you stuck to your diet, and get cookin!

What Will I Need?

2 cups almond flour

.5 avocado, mashed

1/4 cup cocoa powder

1/4 cup cacao nibs

1/4 cup tahini

3 T coconut oil

1/2 tsp peppermint oil

1/2 tsp pink himalayan salt

1/4 cup maple syrup (or 1/2 cup allulose to stay in ketosis)

How Will I Make It?

Mix all of the ingredients in a bowl. I like to hand mix them so I can really combine it well. Roll into 1.5 in balls (or pack into a mini muffin tray) and freeze for about 2 hours. They should be firm but soft to bite through. Enjoy!
